Brown the butter until nutty and amber. Cool slightly.

Whisk butter with sugars, then beat in eggs and vanilla.

Fold in flour, baking soda, salt, and chocolate.

Chill dough at least 30 minutes (overnight is better).

Bake at 175C for 11-12 minutes. Finish with flaky salt.
Notes & substitutions
Cold dough = thick chewy cookies. Room temp = thin crispy. Your call.
