Creamy Tomato Pasta

Instructions

    Boil pasta in well-salted water until al dente. Reserve 1 cup pasta water.

    While pasta cooks, blister tomatoes in olive oil over medium-high heat.

    Add garlic, cook 30 seconds, then crush tomatoes with a spoon.

    Stir in cream and a splash of pasta water. Simmer 2 minutes.

    Toss pasta in the sauce with parmesan. Top with basil and serve.

Notes & substitutions

No cream? Stir in a spoonful of ricotta or mascarpone instead.
